In 2019, the official conversion to organic farming was validated.

In organic farming, yields naturally tend to decrease, due to less use of inputs and stricter respect for natural balances.
This conscious choice is part of our desire to produce purer, more precise wines, where each terroir can fully express itself. Above all, we are looking for greater aromatic complexity, from healthy grapes, well nourished by the soil and picked at their perfect maturity. Less volume, but more depth.
The yields of controlled designation of origin “AOC Alsace” today represent an average of 57hl per hectare, against 80 authorized by the specifications. Like the AOCs, the “Grands Crus” produce 40 hl per hectare against the authorized 55.
To allow the juices to flow smoothly, pressing takes an average of 5 to 6 hours.
After cold settling, the juices are aged in century-old oak tuns, true witnesses to the history of the estate. Alcoholic fermentation then begins naturally, under the action of indigenous yeasts present on the grapes, guaranteeing an authentic expression of the terroir.
To preserve the purity of the juices, the use of sulfur is limited to the strict minimum throughout the vinification process.
The wines continue to age in these same barrels until they are bottled at the estate.
In a constant quest for quality and finesse, we tend to gradually delay bottling, thus giving the wines all the time they need to structure and develop.
Our Grands Crus thus wait at least three years in bottles before being marketed, a practice that we are gradually extending to all vintages. This refining time is essential to reveal all the complexity and purity that we seek in our wines.

After a two-year absence, Muscat and Pinot Noir Rosé are back on our menu! Two wines full of character, designed to accompany your sunny moments.
Pinot Noir [Kritt] is a new cuvée presented for the first time with the 2022 vintage. Coming from a massal selection plot originating in Burgundy, this Pinot Noir was deliberately planted closer to the ground to promote optimal ripening.
The grapes were carefully hand-picked into 40-kg perforated baskets to preserve the integrity of the berries until they reached the winery.
For vinification, we opted for whole-bunch maceration, made possible by the exceptional quality of the vintage.
We also created a “mille-feuille” of whole-bunch and destemmed grapes, achieving a subtle balance between freshness, structure, and complexity.
The prolonged exchange between the solid parts and the juice has offered a finer texture and increased elegance. To reveal the full potential of this cuvée, we aged it for two winters in 500 L barrels and demi-muids, to further refine the mouthfeel, for a silky grain and additional depth.
